Kantor’s desire to constantly create new and innovative dishes means that he rarely makes the same dish twice. You can, however, expect the unexpected such as table side sorbet creation with the use of liquid nitrogen, pliable chocolate ganache with dessert or a self-dressing salad that is as much performance art as it is a cheese course.
That’s what happened last night during a 5 course meal served in a private home for a special birthday dinner. Taking into consideration the favourite flavours of the birthday boy, Kantor crafted a meal that contained all of the ingredient requests but in none of their usual forms. It was a birthday meal that won’t soon be forgotten.
